5 years

This day, five years ago, I reconnected with my high school crush, and the next day we had our first date, and the rest, they say, is history!

Like everyone else, I am currently loving the mint trend. Yet, trends always make me nervous: 1. sometimes they are awful {case in point, feathers in the hair.} 2. they can make me apprehensive to invest. While I have not felt this way about the mint trend {hello mint skinnies!}, I can't but help but love, and want, the following pieces with a hint of mint.

white skinnies

who doesn't love white skinnies? {if you can't tell, I have a skinny obsession.} White was my first "colored" pair. I love wearing them all year around, but there is something about them that is so quintessential summer. White skinnies look great with anything but I think they are too perfect with a tan and some nice weather {and maybe these sandals!}

zucchini pancakes

I am kinda obsessed with zucchini's. When I lived in my bachelorette pad, the refrigerator was never complete with some either cooked and ready to eat or raw and ready to cook. I am also obsessed with pancakes and have a weekly tradition of going to brunch where I talk how I am going to order them, then proceed with a healthier option. Anyway...I love this recipe {similar one found here, I also added corn and shredded squash} as it is yummy and serves as a great way to impress your dinner guests by changing up the traditional side dish.

*Hint: I found that shredding the vegetables, then placing in a strained and using a spoon to press the veggies against the side helped get some the fluid out, providing for less watery pancakes

I also served it on top of my gazpacho recipe and garnished with fresh goat cheese for a vegetarian meal for myself.

I can't get enough of this color combination. It is no secret that I love orange, but my current favorite obsession is it perfectly paired with other pops of color {here with white, here with purple}. I am currently inspired to incorporate these pants with this top and this post inspired me to buy these adorable sandals!
