New Year's resolutions are overrated. That being said, mine was to eat more vegetables. As a veggie myself, this is not too difficult but I am making more of an effort to include organic, fresh veggies into our diet. I came across an easy side dish that included cauliflower. Enjoy!
for a couple, use one head of fresh cauliflower, cutting up the florets and placing on a pan.
mildly salt, pepper and olive oil and roast for 30 minutes, stirring, turning once.
Add Parmesan and Gruyere cheese* and place back in the oven for 2-3 minutes and enjoy!
{*obvi, the more cheese, the less healthy, yet you still get the credit for eating your veggies!}

I am always happy to eat my veggies unless they are lima beans! I love cauliflower, but I'm actually allergic to it! And to dairy. So, this recipe is a no-go for me, but I would happily throw soy cheese over any other veggie and call it healthy!
